When asked what distinguishes St. Florian's from other breweries...one characteristic always stands out for us above others: BALANCE! As our local firefighter, Aron operates on adrenaline day in & day out...when he leaves his firehouse to return to the brewery, it seems only natural that he'd seek balance & moderation. As our brewmaster, Aron exemplifies balance as he crafts beer. Whether in or out of the firehouse, brewhouse, our house, or your house, every day is entirely unique. Thus, we craft a range of beers to suit any given day: light, dark, hoppy, crisp, sour, barrel-aged. We hope that everyone will feel welcome and find something in our line-up to suit their personal palate.

St. Florian's Brewery CORE/FLAGSHIP RELEASES
"48/96" references a typical firefighter's schedule: 48 hours on-duty, followed by 96 hours to recover from a rigorous shift. 48/96 drinks like a pilsner with "oomph", a slightly hoppy blonde ale, a flavorful cream ale, or a pale-pale ale; a very light, crisp, lager-esque beer with enough body to cleanse your palate. A quintessential beer to refresh you during your time "off-duty": Single-hop Citra session ale with a touch of rye at 4.8% ABV.

St. Florian’s Brewery California Common
A lager fermented at ale (warmer) temperatures. It represents the best characteristics of both of these styles: the rich, malty body of an ale balanced with the crisp, clean, refreshing flavor of a lager. St. Florian’s Brewery California Common rounds off with mellow fruitiness & an underlying earthy hoppiness. Native style to the San Francisco Bay Area. 6.0% ABV & 35 IBUs

An “East Coast meets West Coast” Style IPA. East Coast IPAs are historically on the malty side. And, the typical IPA motto on the West Coast: “the hoppier the better”. Flashover IPA represents both styles in a well-balanced, easy-drinking brew with a citrus overtone: very hoppy with a malty backbone. 7.3% ABV & 75 IBUs

St. Florian’s Brewery Brown Ale
An English-American hybrid Brown Ale built upon English & American hops, and English yeast. While most Brown Ales tend toward bitter or sweet, this ale glides over your tongue perfectly balanced between those flavor profiles with a surprisingly light, palate-cleansing body. 6.0% ABV & 22 IBUs
Stews, corn, hamburgers, rich desserts, dark meat, earthy vegetables, nutty or mild cheese, any meal you’d drink a rootbeer or cola with…
A big IPA fermented with Belgian yeast, but we don't necessarily call this a "Belgian Style IPA" (first: it's much more fun to say "Uberschlag" & secondly...). We hold back the yeast so as to richen up the body and add some sweet fruity notes & spicy notes to Uberschlag. The Belgian aspects don't overwhelm the IPA, they soften up the hops and add their notable characteristics to the complexity of the beer. 7.3% ABV & 75 IBUs
Sharp or tangy cheeses, such as apricot stilton or aged cheddar; rare meats, carpaccio, or prime rib with horseradish sauce; spicy Thai dishes; crème brulee.

BELLA ROSA ENGINE STOUT
Our friends at Bella Rosa Coffee Company of Santa Rosa roast beans with an innovative process, producing beans with a remarkably low acidity level. Their Roasters Reserve is featured in this stout, which accentuates smooth coffee notes. 6.5% ABV.
Bleu cheese; carne asada torta (loaded with guacamole and jalapenos!); salted caramel ice cream.
A variation of our Brown Ale, barrel-aged in local bourbon barrels, from Prohibition Spirits in Sonoma, for approximately 7-to-8 months. During aging, the ale takes on the barrels’ vanilla & smoky oak tones. 6.0% ABV

EXTREME CONDITIONS DOUBLE IPA
Extremely juicy. Extreme levels of Amarillo, Citra & Mosaic hops; yet true to St. Florian’s Brewery tradition, we maintain a threshold of balance which won’t put your palate under duress. 9.4% ABV & 94 IBUs
Carbs (got to load up to absorb the 9.4% ABV): pizza (especially thick crust Chicago style); noodles (pesto pasta, lasagna, pad thai, ramen...); loaded baked potatoes; rice bowls; corn on the cob; potato chips; fruit salad.
A variation of our Brown Ale, barrel-aged in local red wine barrels, from Malm Winery in Healdsburg, for approximately 6-to-7 months. During aging, the ale takes on the flavors naturally found in the barrels, with a slight inflection of tart pucker. It reflects the bright flavors of the fruits of our Sonoma County vines, with 6.0% ABV.
